Orange and Mustard-basted Turkey

100 g/4 oz turkey breast fillet

1 small carrot

For the marinade:

30 ml/2 tbsp orange juice

5 ml/1 tsp soft light brown sugar

5 ml/1 tsp balsamic vinegar

Salt and freshly ground black pepper

For the glaze:

15 ml/1 tbsp orange marmalade

5 ml/1 tsp Dijon mustard

1 Cut the turkey into thin strips and coarsely grate the carrot.

2 Mix together the marinade ingredients, stir in the turkey strips and leave to marinate in the fridge for up to 4 hours.

3 Remove the turkey from the marinade and mix with the carrot.

4 Blend together the glaze ingredients and stir in 5 ml/1 tsp of the marinade.

5 Toss the turkey and carrot in the glaze and microwave on High for 4–5 minutes until the turkey is cooked through, stirring once during cooking.

6 Microwave the remaining marinade on High for 30 seconds or until bubbling. Spoon over the turkey before serving.

Preparation and Cooking Time: 15 minutes plus marinating
